Apple and cinnamon are made for each other. When combined with a delicious crust I don’t see how anyone can resist. This weekend I finally had time to make a from-scratch apple cake and it was delicious!!

Parsley salmon topping

Decorated lemon & raspberry layer cake

My best friend’s birthday was last Saturday and I wanted to give her a gorgeous cake to celebrate at her birthday party. My sister is really good at making and decorating cakes so she was in charge of the project. The result was really festive with bright pastel colors and the cake was absolutely delicious – the lemon and raspberry flavors complimented each other well and it was not overly sweet, even with all the buttercream.

Easy fondant flowers

My sister is the big cake decorator in the family – I’m more a fan of eating the left-over frosting and making easy fondant shapes using cutters and plungers.

Decorating a cake with fondant flowers is such an easy way to make a boring cake look pretty. Best of all, the flowers can be made in advance, simply stored in an air-tight container.

Chicken & pasta salad

My boyfriend and I have full time jobs, university, and annoying duties that take up a lot of our time, so we are big fans of quick and easy meals. However, I don’t want to buy pre-made foods or eat unhealthy junk.  As a result, I’m always brainstorming or browsing the many incredible food blogs online to find healthy meals that don’t take forever to prepare.

I’m a very big fan of salads, but naturally my boyfriend wants something a little more “solid”. So we often compromise by eating salad with bread or salad with pasta. You can add any vegetables you like and top it with your favorite salad dressing.

Vase with symmetric pattern

I love having branches in the apartment. They are pretty by themselves or you can hang ornaments on them.

I recently bought a tall glass vase tall enough to hold some pretty branches but i quickly thought it was a bit too plain and boring. I found a pretty pattern and decided to paint it.

New Year’s Cake

Happy New Year everybody! I can’t believe 2011 is already coming to an end. For me, it was a year full of illness and the loss of my dear grandfather, so I’m glad to see it go and welcoming a new year in which I will hopefully be much happier and healthier! Some of the things I’m especially looking forward to in 2012 are starting on my master’s at university, start running again, hopefully start playing basketball again at the end of the year, and spending more time with my amazing boyfriend :D. So bring it on, 2012 – I’m so ready!

In Denmark, it’s tradition to serve a New Year’s cake, primarily consisting of marcipan, with the champagne at midnight. I think it’s insanely delicious, so I stubbornly make it from scratch every year even though the stores sell beautiful, premade ones. So here’s how to do it if you like me, prefer the homemade kind.

Chocolates with caramel filling

I’m at my parents’ place for the holidays. Unfortunately we are having rainy weather for Christmas, but our Christmas tree is three meters tall and the house is decorated, so the Christmas spirit is booming! Merry Christmas everybody, I hope you have a good one!

Risalamande – Vanilla rice dessert

Risalamande (rice with almonds) is one of my all time favorite desserts. It is a traditional Danish dessert served at Christmas time. It’s basically rice, cream and almonds served with hot cherry sauce and it’s just delicious!

It is usually served on Christmas Eve after Christmas dinner. All almonds in the dessert are chopped except one – whoever gets the whole almond in their dessert wins a prize.
